Your mission The Responsibility: Assists in overseeing all aspects of kitchen operations. Maintains and ensures unit compliance with Bella & Bona policies and procedures, inventory procedures, and all applicable HACCP guidelines. Assists with planning, organizing, directing, coordinating, scheduling, and delegating responsibility to the staff. Ensures the staff meets the kitchen's KPIs daily. Assists the Kitchen Manager, as assigned. Ensures adherence to all systems, procedures, and policies. Coordinate with the city manager and create, maintain, and implement all unit standard operating procedures. Assist in controlling food costs and usage by following proper procedures, standard recipes, and waste control procedures. Directly supervises all assigned subordinate staff. Assist in training staff and kitchen personnel in the safe operation of all kitchen equipment & utensils, cleanliness, and sanitation practices; ensure all team members have the right tools, knowledge & equipment to do their jobs safely & effectively. Evaluates employee performance and provides guidance and feedback to assigned staff. Oversee daily prep to ensure operation has the appropriate amount of product for the day and that the product meets our quality standards; ensure prep lists are completed accurately and communicated clearly. Perform daily line checks before production and detailed station Closing. Assist with daily and weekly inventory and communicate the items to management. Check and maintain proper food holding and refrigeration temperature control points. Manage daily & weekly deep cleaning and facility maintenance duties; maintain appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas. Your profile Education: Specialized or technical training. Experience: 2 years. Expertise: One year plus experience in a supervisory role within a high-volume full-service kitchen environment. Strong track record of success in previous assignments demonstrating upward career mobility. Demonstrated knowledge of pertinent health and safety laws and regulations.
